Removed the OEM Nardi wheel on my NB2 and installed a Cipher wheel over the weekend . More aggressive grip but retains the factory airbag. Install was pretty straightforward.

Do you find the flat bottom gives you any significant knee room?
When I’m on the brakes
, my thigh is right against the wheel. A little extra space would be welcome.

Significant improvement in knee room? Probably not. Some? Absolutely. That being said I am still in the factory NB2 seat and I currently sit way too high. My head hits the roof on slight bumps. I am planning a foamectomy or aftermarket seat.
One thing that was less obvious to me when buying but apparent when gripping is the sides are somewhat flatter/squarer. Feels nice.

That wheel does look nice and might have to be future splurge on day.
The foamectomy is definitely worth it. At the very least, take off the “bump” on the underside of the bottom cushion. There is some advantage to taking out some foam from the lower and upper back rest as well, depending on your body shape. Don’t expect to gain more than 1/2" to 1" of headroom, though. To get really low requires different seats, but the challenge is a seat small enough to fit in the car but still big enough to fit a non-tiny person.
